Is there anything better than soup on a rainy, gloomy day? Or even a sunny, perfect day? I love soup. I love soup in all of its forms- broths, stews, thick, thin, chunky, light, hot, cold- I don’t discriminate. To me, soup is the perfect food. It’s filling, it’s delicious, it’s versatile. This Turmeric Parsnip Cauliflower Soup with Grass Fed Meatballs came together on a whim, and ended up being the perfect rainy day meal.

One super rainy, chilly day in typically sunny St Petersburg…

I decided to make this Turmeric Parsnip Cauliflower Soup with Grass Fed Meatballs. The meatballs are egg free and hold together perfectly, and the soup is thick and warming.

It’s also super gut healing!

With additions of turmeric, bone broth, and garlic, this soup is a powerhouse of gut healing goodies. Bring on the health!

Instructions
Turmeric Parsnip Cauliflower Soup
  1. In a large stockpot over medium heat, add coconut oil or avocado oil, leeks, garlic, and parsnips. Cook over medium heat or until fragrant.
  2. Add in cauliflower and stir to combine.
  3. Add in broth and any additional water to just slightly cover the veggies.
  4. Let simmer for 20 minutes.
  5. Use an immersion blender, or transfer to a high powered blender and puree until smooth.
Grass-Fed Meatballs
  1. Preheat oven to 400.
  2. Combine all meatball ingredients and mix with hands.
  3. Roll into small balls and lay out on a baking sheet.
  4. Bake for 15-20 minutes.
  5. Add into soup, or eat on the side.
