Stir Fry Noodle Bowl (AIP, Whole 30, Paleo)

I love ordering takeout… well, I used to love ordering takeout. One of my most favorite? Lo Mein. Also Pad Thai. Also Pad Se Ew. Also Chow Mei Fun… getting the idea?

It’s all about the noodles!

And before you ask, “But Callie, what about vegetable noodles?”… know that I hate, loathe, despise them. They give me the willies just thinking about them. Especially zoodles. BARF.

I think it was from a bad few experiences with an old vegan cafe my company used to bring in (they shall remain nameless and have since closed up shop.) They would serve zucchini noodles (zoodles) and I used to be able to stomach them. Then one day, whatever preparation they did was enough to make me gag. And I’ve never liked a veggie noodle since.

But this Stir Fry Noodle Bowl is where it’s at!

Using Miracle Noodle gives the closest feel to rice noodles often used in pad thai or chow mei fun. They’re super easy to make, zero carb (for all of you doing keto these days,) and have virtually no taste on their own (which means they’re super versatile!)

This Stir Fry Noodle Bowl uses high quality ground meat and veggies, along with some coconut aminos, coconut vinegar, and fish sauce to create the umami in a traditional stir fry bowl.

Instructions
  1. In a large saucepan or wok, saute the meat until cooked through.
  2. Add the whites of the scallions, garlic, ginger and vegetables. Cook until vegetables start to soften.
  3. Add coconut aminos, coconut vinegar, fish sauce, and prepared noodles.
  4. Stir fry until everything is warmed through and flavors are melded.
  5. Serve in large bowls and garnish with the green portions of the scallions.
