Slow Cooker Pulled Chicken with Homemade Coleslaw (Paleo)

Slow cooker meals are never something I think about. I currently don’t have an InstantPot (who needs another appliance? not this girl!), so I use my crock pot in times where I remember and I know I won’t have time to cook when I get home for the evening. I like making pulled chicken, pulled pork, chilis, etc. but I never venture out from the pulled category. I’d like to start investigating more, because I gotta say… prepping in the morning and having dinner just ready when I get home is nothing short of magical.

These pulled chicken bowls with homemade coleslaw are easy peasy!

The chicken comes together super quick, and the coleslaw gives you an opportunity to use your mayo making skills (when you nail this down, it’s a life changing moment.) You can try this same thing will pulled pork, pulled beef, or even pulled jackfruit for those who don’t want meat!

Instructions
Pulled chicken
  1. Place chicken breasts in slow cooker, and add bone broth.
  2. Place on low for 8-10 hours.
  3. Pull chicken apart with 2 forks, and add bbq sauce. Keep warm while making coleslaw.
Coleslaw
  1. Mix the bag of coleslaw with 1/2-2/3 cup homemade mayonnaise. *You can use a paleo friendly mayo like Primal Kitchen Mayo (link in notes!)
  2. Add a splash of apple cider vinegar and a squeeze of honey.
  3. Stir together until all coated.

*Homemade mayo recipe:

  • 1 egg
  • 1 cup avocado oil
  • juice from 1 lemon
  • salt

Place all ingredients in a mason jar or tall container. Using an immersion blender, plunge it (without turning on!) all the way to the bottom of the jar. Then turn on and let sit for 15-20 seconds. You'll see mayo start to form. Slowly raise and lower the blender stick to incorporate the rest of the oil. Voila, mayo.
