Peach Cobbler (Paleo, AIP Options)

Is there anything better in the Summer months than a fresh peach cobbler?

When I think about dessert, I traditionally gravitate toward ice cream, or some sort of a brownie type situation. (This is pre-AIP Callie talking, obviously.) I tend to forget about how good fruit based desserts are! This peach cobbler uses peaches at their peak of freshness, and comes together in less than a half an hour. I like to prep it with dinner, and pop it in the oven while we’re eating, so that when we’re done, dessert is ready to roll.

This peach cobbler is a great summertime dessert, and is even better for leftovers in the morning!

Instructions
  1. Preheat oven to 375.
  2. Place freshly chopped peaches in a baking dish or deep pie dish.
  3. In a small bowl, mix coconut oil and honey into your almond (or tigernut or cassava) flour to form a crumble. If its too dry and doesn't crumble, add more coconut oil and honey in small increments.
  4. Sprinkle crumble over peaches.
  5. Bake for 20-30 minutes, or until top starts to brown slightly.
  6. Serve warm with coconut ice cream over the top, or reheat the next day for breakfast! Or do both!
