Summertime Beanless Chili (Paleo, Whole 30)

Is there anything better than a hearty chili? Typically, most see a big bowl of chili as the best meal for a chilly, rainy day. Any they’re right. BUT, what if I told you that chili is where it’s at even on a hot summer day. Think about your neighbor’s famous chili that she enters at the Annual Chili Cookoff at the local fair. It’s always hot out and yet hundreds flock to sample Millie, Sandy, and Josephine’s chili recipes!

So I challenge you to eat this chili in the Summertime!

Cook it up, enjoy your day out in the sun, and come home to a low-carb, meat-tastic, easy peasy treat!

So why isn’t normal chili paleo?

Well, first off… our sweet, farty friend, the bean. I like beans just as much as the next guy, but for those of us working through lowering inflammation, it’s important to remove them from our diets to maximize healing. You know what they say about beans… the more you eat the more you… well, you get it.

Also, typical seasonings in popular canned brands of chili, or even from your favorite little chili stop often contain additives and preservatives that aren’t necessarily appealing when you get a good look at them.

Let’s take a look at a very popular canned brand of chili that shall remain nameless.

The ingredients are: Water, beef and pork, beans, concentrated crushed tomatoes… all sounds ok, right? Well then we get the rest of the label: corn flour, textured soy flour, salt, chili powder (chili peppers, flavoring), flavoring, sugar, cornstarch, spices, green chiles (contains citric acid), onions, jalapenos, peppers (contains vinegar, salt.)

Enter Paleo Summertime Chili!

This chili is made with high-quality meats and paleo-safe seasonings. It comes out delicious, makes a ton, and is packed with tons of nutrients and flavor.

Instructions
  1. Sautee onions, green pepper, and carrot.
  2. In a large pot, cook meats together and add seasonings to taste.
  3. Add cooked veggies to pot, and add tomatoes and tomato sauce. Stir to combine.
  4. Allow to simmer for at least 30 minutes. Taste and adjust seasoning as necessary.
