Hidden Liver Tacos (AIP, Whole 30, Paleo)
Isn’t taco night the best? What about taco night with hidden liver?
Growing up, taco night was a main staple. We would sauté up conventional ground beef with a packet of taco seasoning. We used corn tortilla shells and soft flour tortillas, and topped everything with shredded lettuce, red onions, tomatoes, guac, sour cream, and jarred salsa. They were DELICIOUS.
These hidden liver tacos are a fantastic AIP variation of an old classic.
The best part about them? The liver! Duh!
I know, I know, you hate liver. But it’s so unbelievably good for you AND you can’t even taste it in this dish. (Let’s be honest, I could eat all liver tacos, no problem…)

Ingredients
- 1 Lb grass fed ground beef
- 1 Lb Grass fed beef liver Chopped fine
- 1 Tsp Salt
- 1 Tbsp Garlic Powder
- 1 Tbsp Dried cilantro
- 8 Cassava tortillas I used Siete Foods
- 1 Handful Lettuce or greens
- 1 Avocado Sliced
- 1/2 Cup Red Onion Diced
- 1-2 Tbsp Imitation mustard From KC Naturals, optional

Instructions
- In a large pan, sauté beef and liver together with seasonings until cooked through.
- Assemble tacos with toppings of choice and enjoy!
