Hidden Liver Stir Fry (AIP, Whole 30, Paleo)
Oh offal. How I love thee. Especially liver.
NEVER in my life did I think that I would say something like this. My dad always got liver and onions, and would pass over a bite. Every time, I was horrified. How could anything be so bad!?
Just as we grow and change, so do our tastes.
When I started really getting in to the paleo world, I decided to try liver again. I started with chicken livers, and was surprised at how much I liked them. Then I got brave and tried beef liver. It was DELICIOUS! I kept it simple… just searing it on the stove top, and topping it with some sauteed onions. Nothing fancy, nothing difficult. Just pure taste.
Not everyone shares my love of liver…
…Including my husband. So, I have started to get sneaky and creative to give us both the nutrients that offal offers (see what I did there?) This stir fry sneaks in beef liver along with grass-fed ground beef, so even the pickiest of offal-haters will eat it (and love it!)
The trick to hiding offal?
Don’t let em see it first! And chop or grind it to match the texture of the other protein ingredients. There’s almost no way to pick out the different goodies in there!
