Dirty Cauliflower Rice (AIP, Whole 30, Paleo)

This Dirty Cauliflower Rice came out of nowhere.

I was putzing around the kitchen, trying to make something tasty, while using up some old ingredients in the fridge that needed to be used.

And so, this Dirty Cauliflower Rice was born!

It uses many staples that we have in our fridges already, with a few additional ingredients like paleo bacon and an onion. It’s pretty versatile as well. I originally topped it with a piece of broiled salmon, but then the next day had it as a side dish to some chicken apple sausage. I want to eat it every day!

Instructions
  1. Over high heat, saute the onions and bacon until browned. I like it when the onions start getting caramelized.
  2. Add the cauliflower rice to the pan and cook until warm and the cauliflower starts to get crispy. Add in the seasonings and adjust to taste.
  3. Top with whatever you want or pair it with your favorite proteins!
